Cheesy Berry Vinaigrette Rotini Salad

Cheesy Berry Vinaigrette Rotini Salad is a  delicious goodness that combines frozen berries, apple, rotini pasta, cheddar cheese and my wonderful cheesy berry vinaigrette dressing.

My new fruit obsession of late have become strawberries and raspberries. I think the colors are to blame a little bit for that because they just pop when pictures of them are taken with sunlight. They have recently become a source of inspiration for most recipes I am making.

The idea behind this recipe was to make a cold pasta salad with a runny cheesy maybe spicy dressing .

Now, based on the number of people you have in mind to serve you would want to double, triple in size all ingredients. I have been making use of icecream scoops to measure things out lately but keep in mind a regular measuring tablespoon works just as well.

NEED//

The Salad

3 Strawberries and blueberries

A couple of ice berg lettuce

2 Tbsp of cheddar cheese

Rotini Pasta

Water

1/4 of an Apple

 

The Dressing

A dash of red chili flakes

1 tbsp. Of Soy sauce

2 tbsp of cheddar cheese

3 Tbsp of water

1 tbsp of oil

A dash of salt (not necessary but based on preference)

DO//

On high heat, In a pot bring some water (usually about double the size the amount of pasta to be added) to a boil, add rotini pasta once water starts boiling and allow to cook for about 10 -15 minutes till pasta has a soft texture or edible enough to your liking. There is also always instructions on packaging for you to follow.

Rinse pasta with cold water . Allow to cool by placing in the fridge.

Now to the good stuff; the cheesy berry Vinaigrette. Add 3 strawberries into a microwaveable bowl , olive oil, water , soy sauce, chili flakes and microwave for 3 minutes, stirring at each 1 minute interval until it becomes a thick Sauce like texture forms.

In a pan or salad bowl, bring all ingredients together, pouring dressing on the top.

This recipe might cause you to feel sleepy a couple of hours later, so it’s perfect for a lazy Saturday or Sunday. It will cause you to wake up feeling refreshed.

It is recommended that reasonable amounts of water is consumed to aid digestion when you eat food as with this recipe.
